The "How was school today...?" (HWST) project. It helps pre-literate kids with complex communication needs talk about their day at school, using sensors, mobile phones, and natural language generation.
I was previously a member of the Natural Language Generation group in Aberdeen, UK. The group is involved in projects that somehow make sense of data and generate easily-readable text for a variety of applications. Previous and current application areas include medical reports about neo-natal babies for parents, weather reports, smoking cessation letters, and of course HWST (above).
